Stir together apples, maple syrup, unsalted butter, lemon juice, kosher salt, and cinnamon sticks in a 4- or 5-qt. slow cooker. Cover and cook on Low for 6 hours. Remove and discard cinnamon sticks. Stir mixture to desired consistency. Serve warm or chilled.
