Green smoothies are the trendiest way to eat your vegetables. But leafy greens like spinach and kale aren’t the only veggies that make for a delicious (and healthy) drink. It’s time to up the veggie ante by blending in mild-tasting frozen cauliflower for extra fiber and vitamin C. This recipe calls for pineapple, banana, spinach, and, you guessed it, cauliflower. It’s the perfect balance of fruit and veggies, the ideal amount of savory and sweet.

Cauliflower is low in calories yet high in vitamins, making it one of the most underrated superfoods. In fact, cauliflower has at least some of nearly every vitamin and mineral your body needs. It’s packed with vitamin C, vitamin K, vitamin B6, to name just a few. It’s also super high in fiber and a great source of antioxidants. Bottom line: We all need more cauliflower in our lives, and this smoothie is a great place to start.

How to Make It

Place chopped pineapple, frozen cauliflower, frozen bananas, spinach, yogurt, and milk in a blender; process on high until mixture is smooth and blended, 30 to 40 seconds, stopping to scrape down sides as needed. Divide among glasses.
