But it can be easy to get bored with your go-to chicken noodle or tomato. To mix things up, try whipping up an Asian noodle soup at home. This one is loaded with low-calorie, protein-packed shrimp, along with ample nutritious ingredients like fresh veggies, ginger, and shitake mushrooms. Watch this video to learn how to whip up this fun and delicious rice noodle soup with shrimp recipe. To begin, bring a large pot of water to a boil, and then remove the pan from heat. Toss in your rice noodles and let them soak until they’re tender, which should take around eight minutes. Drain the noodles in a colander and then rinse them in cool water. Toss them in a bowl along with one tablespoon of sesame oil, and set it aside once they’re completely coated. Then it’s time to cook up the rest of the soup ingredients. Start by breaking out a large pan, and pouring in some canola oil. Sauté your chopped mushrooms over medium heat and stir them until soft and golden--this should take around two to three minutes. Then add the vegetable broth, carrots, and ginger, then simmer for five minutes. Next add your shrimp to the pan and continue to simmer until they’re thoroughly cooked, which should be around two minutes. Then stir in scallions, lime juice, soy sauce, and half of the herbs.
