Not sure what to do with leftover mashed potatoes? We have the perfect solution to prevent your taters from going to waste: transform them into comforting potato pancakes. This recipe gives the potatoes an extra punch of flavor with the help of some Parmesan cheese. To get started, mix your mashed potatoes with chives, egg whites, and breadcrumbs in a large bowl. On a separate plate, combine more breadcrumbs and cheese. Then, divide the potato mixture into eight equal parts and dip them in the breadcrumb mixture, shaping each into a ¼-inch patty. Next, heat a tablespoon of oil in a large nonstick pan. Plop four patties on the heated pan, and cook for 3 to 4 minutes on each side, or until they become golden brown. Then repeat for the next four patties.

Serve them up with classic applesauce and sour cream, or Greek yogurt for a healthier option. You can also eat them during lunch the next day, balanced with a fresh side salad topped with plenty of veggies.
