This Easy Black Bean Vegetarian Chili is Packed With Protein
Want a meal you can prep at the beginning of the week that you won’t get tired of by day 3 of leftovers? This ridiculously tasty winter chili should hit the spot. By combining hearty ingredients like black beans, squash, bell peppers, tomatoes, and chiles, along with flavor pops of chili powder and oregano, this smoky vegetarian dish couldn’t be more satisfying.
Watch this video to learn all the steps to making tasty black bean chili with winter squash. To start, heat up some olive oil in a large pot over medium heat. Then add the onion and bell pepper, and cook for about five minutes. Be sure to stir the veggies frequently, to avoid burning. After this, add the garlic and cook for a minute, again, stirring constantly. Next mix in black beans, veggie broth, tomatoes, green chiles, chili powder, chipotle chili powder, and oregano. Simmer the ingredients for around 10 minutes while covered, then for another 10 uncovered.

Next, cut some winter squash in half, scoop out the seeds, and place in a microwave safe dish with a small layer of water at the bottom. Be sure to pierce the squash with your fork a few times, to help release the heat. Cover the whole squash in plastic wrap and microwave on high for eight minutes, or until it feels tender when you pierce it with a fork. After the squash has cooled, peel it and cut into small chunks, then mix it into the bean mixture. Add a bit of salt and cook this for another five minutes.
Serve it up with some cornbread or a nice red wine, for a comforting winter dinner.
