5 Healthy Recipes to Celebrate Cinco de Mayo
A lighten-up fiesta
Mexican food can be a diet disaster for me if you're not careful. There's plenty of salt-rimmed margaritas and nachos covered in cheese to go around, but these foods obviously aren't friendly on the waistline. It's even worse to consume them in large quantities, which is often the case when the 5th of May rolls around. You can still plan to celebrate Cinco de Mayo—in moderation—with some great low-calorie, yet flavorful dishes.
•1 ripe avocado
•1 cup edamame, shelled
•1 lime, juiced
•1 chipotle pepper in adobo sauce
•2 tsp. minced garlic
•1/3 bunch of cilantro
•1/2 cup chopped tomato
•1/4 cup chopped onion
•Salt and pepper to taste
Directions: Combine all ingredients in a food processor until smooth. Serve cold.
•1 mango, diced
•2 plum tomatoes, seeded and diced
•1/2 cup chopped red onion
•1 jalapeno pepper, chopped
•1/4 cup chopped cilantro
•Juice of 1 lime
Directions: Combine chopped mango, tomato, onion, jalapeno, and cilantro in a medium bowl. Squeeze lime juice over the bowl and toss together before serving.
•1.5 liters of dry white wine
•1/2 liter of soda water
•1/2 liter of Fresca (or other citrus soda)
•1 bag of frozen berries
Directions: Cut peaches and pears into bite-sized pieces. Combine wine, soda water, and citrus-flavored soda in a large pitcher. Add peaches, pears, and raspberries. Chill sangria before serving.
•1 10-ounce can of Rotel Diced Tomatoes & Green Chilies
•10 ounces of plain Greek yogurt
Directions: Drain juices from tomatoes & green chili can. Combine with Greek yogurt until fully blended. Serve cold.
Spicy Lime Pork Kebabs
•2 boneless pork chops, cut into 1-inch chunks
•1 green bell pepper
•1 dozen cherry tomatoes
•1/4 cup lime juice
•1 tbsp. chili powder
•1/2 tsp. cumin
•1/2 tsp. hot sauce
•1 garlic clove minced
•Salt & pepper to taste
Directions: Combine lime juice, chili powder, cumin, hot sauce, garlic, salt, and pepper; mix well. Add pork chop chunks to marinade; allow to marinate for up to an hour. Add pork to skewer and grill. Add tomatoes and peppers to a separate skewer and cook.
