Romesco Dip

  • 1/2 cup whole roasted almonds
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons minced garlic
  • 1 cup drained jarred roasted red peppers
  • 1/4 cup crumbled feta
  • 2 teaspoons sherry vinegar
  • 1 teaspoon hot paprika
  • Salt and pepper


  1. Pulse almonds in a food processor until finely chopped. Place oil and garlic in a skillet; turn on medium-low heat. When mixture sizzles, wait 30 seconds, then transfer to processor. Add remaining ingredients except salt and pepper; process until well blended. Season with salt and pepper. 

    This yummy dip is packed with flavor, thanks to ingredients like garlic, crumbled feta, and hot paprika.
  • Yield: 1 1/4 cups
