Creamy Lemon-Avocado Dressing

  • 1 medium avocado (about 9 oz.), peeled and pitted
  • 1/2 English cucumber (about 7 oz.), chopped
  • 1/2 cup fresh lemon juice
  • 1/4 cup avocado oil or extra-virgin olive oil
  • A few shakes of hot sauce, optional
  • Salt and freshly ground black pepper


  1. Combine avocado, cucumber, lemon juice, oil, and hot sauce, if desired, in a high-speed blender; blend until smooth. Taste and season with salt and pepper. If necessary, thin with warm water or additional oil to reach desired consistency.

  • Yield: About 2 1/2 cups
