Sweet and Spicy Cucumber Salad

Ingredients

  • 3 kirby cucumbers, seeded and thinly sliced
  • 1 cup grape tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1/4 cup white wine vinegar
  • 2 teaspoons sugar
  • 1/2 to 1 teaspoon crushed red pepper
  • 1/2 teaspoon salt

Preparation


Combine first 3 ingredients in a bowl.

Combine vinegar and remaining ingredients (through salt) in a small bowl, stir with a whisk until sugar dissolves. Pour vinegar mixture over cucumber mixture; toss gently to coat. Cover and refrigerate 1 hour.


  • Yield: serves 6 (serving size: 1/2 cup)
