Cashew-Coconut Shrimp Stir-Fry
Sauté 2 minced garlic cloves in 1 teaspoon peanut oil over medium heat for 1 minute. Add 2 cups of frozen stir-fry vegetables; cook for 5 minutes. Add 12 medium precooked frozen shrimp, 1⁄2 cup precooked microwavable brown rice, and 1⁄3 cup light coconut milk; sauté 5–8 minutes more.
