Do some cheese platter magic

If you have cheese, it's a party. During the holidays, cheese is a staple at the home of Frances Largeman-Roth, RD, author of Eating in Color. "I always keep some fig jam, olives, and a couple of cheeses on hand. That way I can easily whip up a cheese platter when people stop by." You don't need a giant wedge of cheese for a cheese platter, she says, just use what you have on hand. "Slice up an apple or a pear, wash some grapes, add some walnuts and pistachios to the plate and you're all set."
