A Healthier, Safer Red Wine Marinade

This red wine meat marinade recipe from Bruce Mattel at the Culinary Institute of America can help cut carcinogens from grilling.

Barbecuing for Memorial Day? A study out of the University of Porto in Portugal found that beef marinated for two hours in red wine before grilling contained up to 88 percent fewer carcinogens than beef that wasn’t marinated.

So try this recipe from Bruce Mattel at the Culinary Institute of America:

Combine 1 cup red wine, 2 tablespoons red wine vinegar, 3 tablespoons sliced shallots, 1/4 teaspoon crushed peppercorns, and 1/2 teaspoon salt. Add 1 pound of meat, and marinade for 2 hours in the fridge.
