As days get longer and the weather warmer, the variety fruits and veggies tend to increase at your local farmer's market. One type of produce that you often see in the Spring is one of our faves: rhubarb. This veggie may look strange, but it’s a nutritional beauty. It’s a good source of vitamins K and C, as well as calcium and potassium. But let’s be honest—it can be a bit intimidating to cook with, especially if you don’t know where to start. But there are a number of delicious way to cook up this vibrant veggie. This jam combines four nutrition powerhouse ingredients: rhubarb, strawberries, ginger, and chia. Strawberries contain folate, potassium, manganese, dietary fiber, and magnesium. Plus they’re high in vitamin C. Ginger may help ease inflammation and nausea, and help aid muscle recovery and function. And chia seeds boast fiber, omega-3 fats, protein, vitamins and minerals. 

This recipe takes less than 15 minutes to make, and the final product is a jam perfect to spread on toast, a nut butter sandwich, or healthy muffins.
